Not quite what I wanted to do!!!

Hey how are my fellow buddy slimmers…..I know I have not logged on for awhile but  with my hubby home from the hospital and me back to work I have not had the time to blog.  Plus I was really sick with stomach flu….It was really bad. I tell you I have done a toilet marathon before but nothing like I did on Tuesday.  I did not know what to do bend over or sit on it so I did both,,,,,Anyway, while my body was losing fluids I also lost an additional 7 pounds now in reality I Guess it is good but in fact I lost ALOT of fluids. I guess I got badly dehydrated and I couldn’t think I could hardly focus and I was extremely weak.

ANYWAY The reason I am blogging is that since my hubby had his heart attack he has waited to be on a somewhat vegetarian diet and I am running out of ideas of what to make for dinners.  Low salt no cholesterol and low fat so I am calling in the troops(((you guys)))) to help me with ideas that can be whipped up easy because I work during the day and have two children are that are hungry after school.  So any information would be a help..

    Huh… you’ve had it bad, dear. The huge loss in lbs should at least make you feel better about the whole ordeal… be kind to your body now and the weight will stay off. You can do it!

    As for the vegetarian pointes… ay, that’s hard to say, because I don’t know what type of food you like and what methods of preparation suit you best. Do the kids tolerate veggies or do you have to hide them? Stewed or roasted? You know what I mean?

    Simple pointers, if your family tolerates beans and legumes - they’re great for a vegetarian diet, high protein, low GI… so you could make lentil or bean soups or stewes with some butternut squash chunks  - they can be made the day before and then just heated up… and kids can eat them with nicely made ham and cheese toast dunkers. I make lots of chunky soups that are made from whatever vegetable mix may be in season and my family likes, then to spruce it up, I sprinkle chuncks of cauliflower or smoked tofu on to for the vegetarians and smoked chunky bacon or grilled sausage or cheese for the non-vegetarians. Serving it up with nice fresh bread or toast really works! My family particularly enjoys the sauerkraut& beans& smoked tofu combination. Very healthy, too… or… wholegrain pasta and spinach casserole … again something that can sit….
